Bolivian Food Laboratory (LAB)

GUSTU LAB has the purpose of generating quality information on Bolivian food culture to develop theoretical-practical research processes in search of new gastronomic uses for Bolivian traditional products that guide the design of sustainable value added products adapted to the demand of a global market, to promote the value of Bolivian natural pantry.

"Wild Flavors" Exploration Trips

In partnership with public or private institutions specialized in research, development and/or preservation of the areas visited, GUSTU makes permanent research trips to the different eco-regions of the Bolivian territory with the aim of identifying, knowing, revaluing and utilizing products with culinary potential while establishing direct and respectful relationships with producers, rural communities and local authorities throughout Bolivia whose living conditions can be improved by opening of markets for their products, many of which are on risk at disappearing from the Bolivian natural pantry.
